What is the maximum RAM Disk configuration in regards to size on Server 2012r2 and 2016?

The maximum RAM disk size is about 3 GB on 32-bit systems. There is no limit on its size on 64-bit systems.

Having said that, some customers reported they were unable to create a boot-time RAM disk in excess of 150 GB+ for unknown reasons, and worked around the issue by creating several smaller RAM disks.

Sometimes you can get the answer faster if you try the forum search and/or have a look at the software user manual to see if your question has already been answered.
